Banana and yogurt muffins made by Eco Club as part of our Healthy Eating Lessons.
The children learnt that these delicious muffins are full of goodness:
The Bananas provide a variety of vitamins and minerals, in particular potassium which is vital for healthy muscles.
We used low fat Greek yogurt for great taste, low fat but high in calcium, good for our teeth and bones.
Honey was used to sweeten them with no added sugar, so not damaging our teeth or heart.
Olive oil meant they are low fat too.
Oats provide slow release energy as well as a great texture.
Easy Peasy for those busy families to make with your kids on the go!
Mix together: 2 cups of wholemeal flour,
1 cup oats
2 tsp ground cinnamon
½ tsp bicarbonate of soda
Mix together ¼ cup of honey
¾ low fat Greek yogurt
2 ripe bananas mashed
½ tsp vanilla essence
¼ cup of olive oil
Mix wet into dry, pour into muffin cases and cook at 180c for 20 minutes.
